Honey BBQ Chicken Sandwiches

Slice onion into thick wedges and layer into the bottom of crock pot. Layer boneless chicken breast on top of onions. Pour barbeque sauce over chicken to cover and close lid. Simmer on low for 6-8 hours or on high for 3-4 hours. Remove chicken and shred with forks. Place back in slow cooker with barbeque sauce and reheat until heated thru. Serve on rolls or hamburger buns. Substitute Chipotle BBQ for a sandwich with some heat.
