Thai Curry Cauliflower Mac And Cheese

INGREDIENTS:

2 heads of cauliflower
4oz of cream-cheese
8 cups of sharp cheddar
4 cups oh my garlic
1 and a half cups of Thai curry
2 cups of water

DIRECTIONS:

boil the cauliflower in a large pot for approximately 10 min until its just a little soft. grease a large backing pan and put the drained cauliflower in it and set aside.

in a med sauce pan bring the oh my garlic, Thai curry and water to a simmer. add cream-cheese continue to let simmer until its melted. remove from heat and add 6 cups of shredded cheese. mix until creamy.

pour sauce over the cauliflower, mix well.

spread remaining cheese over the top and bake at 375 for 20 min or until the top is starting to brown. let stand 5 min and serve.
